Sweet and Sour Vinaigrette

If you aren’t already making your own salad dressings, now is the time to start. This simple vinaigrette is has a great balance of tangy tarragon vinegar and sugar. It is a perfect accompaniment for green salads incorporating fruit, such as oranges or blueberries. Try it out on the Romaine Salad with Oranges, Red Onion, and Walnuts.

Ingredients

  • 1/2 cup vegetable oil

  • 1/4 cup tarragon vinegar*

  • 1/4 cup sugar

  • 1/2 tsp salt

  • A few good grinds of fresh ground black pepper

  • About 1/8 tsp hot sauce (such as Tabasco or Crystal’s, to taste)

Instructions

Combine all ingredients in a jar. Seal and shake well to dissolve the sugar. Taste and adjust with salt, pepper, and hot sauce, if needed. Store in the fridge for up two weeks.

Notes

*Tarragon vinegar is available in most well-stocked grocery stores. We usually use the Heinz brand. If you have trouble finding it, you can either make your own or substitute in red or white wine vinegar. These vinegar options can be a bit lighter than tarragon vinegar, so you may need a little bit more to get the right balance against the sugar. Start with 1/4 cup of vinegar and taste. If you need a bit more tang to the dressing, add in about an extra tablespoon (or less) of the vinegar, shake, and taste. Repeat until the dressing is where you’d like it to be.
