Paprika-Ancho Rub

Inspired by: Food & Wine's Paprika-Ancho Spice Rub. Use this rub for pork, such as for Smoked Pulled Pork, or for smoked/grilled chicken, such as our Grilled Paprika-Ancho Chicken Drumsticks.

Yield: about 2 cups

Ingredients

  • 2/3 cup packed brown sugar (dark or light)

  • 3/8 cup sweet paprika*

  • 1/8 cup smoked paprika*

  • 1 tablespoon kosher salt

  • 3 tablespoons ancho chile powder

  • 2 tablespoons dried oregano (Mexican oregano preferred)

  • 1 tablespoon ground allspice

  • 1 tablespoon cayenne pepper

  • 1 tablespoon ground cumin

  • 2 teaspoons ground cinnamon

Instructions

Combine all ingredients in a bowl. Transfer to an air-tight container and store for up to 2 months.

Notes

*If you don't have smoked paprika on hand, or don't like the flavor, omit the smoked paprika and use a total of 1/2 cup of sweet paprika instead.
